are putting your hand up to be judged far more
harshly. I believe a gastropub needs to demonstrate
a higher level of creativity and skill while giving
a nod to traditional pub fare. It should champion
seasonal produce and be prepared to take risks but
never shortcuts. A brilliant menu will only get you
so far too – all of this must be offered alongside a
well-considered wine, beer and spirit offering and
of course excellent customer service.

Do you think nightlife in the lock-
out areas is beyond repair? Should
publicans be looking elsewhere?
YES! The lockout is a very blunt,
communistic and short-sighted measure which the
government has introduced. This had nothing to
do with safety. It’s all about politics. This issue
has been politicised and fuelled by media, and the
ramifications are far greater than considered. The
public and licensed venues have been punished
from a weak government decision, lacking
leadership, courage and vision for our community
as a whole. The evolution of precincts will
continue, however iconic entertainment precincts
like Kings Cross and Oxford Street are beyond
repair and are now on a different path, effectively
becoming a developer’s playground. Kings Cross
has changed forever.

What are you most excited about
right now in the world of beverages?
For me being a dinosaur of
the bartending world, it’s the
availability of spirits that are hitting our shores
these days. When I first started bartending back in
the late 90s in New Zealand, we only had a few
basic products, and that was it. Grey Goose hadn’t
even been created!
Liquor companies are now not afraid to import
less well-known products from vermouths and
amaros, to high-end whiskies.
I’m also excited about a lighter drinks offering
coming through many venues and restaurants this
summer. The introduction of lighter, spritz and
wine-based drinks is exciting.
